“Le Homard” Print

This lobster illustration is a celebration of my deep (and slightly obsessive) love for lobsters. So deep, in fact, that I not only have a lobster tattooed on my arm, but also four lobster-themed prints hanging on my wall. My fascination isn’t about taste – I’d never eat one – but about their wild biology.

Here are just a few reasons lobsters are cooler than you think:
– They produce an enzyme called telomerase, which helps prevent DNA breakdown, making them biologically “immortal.” Most lobsters don’t die of old age; they die during molting, when shedding their ever-thickening exoskeleton becomes too difficult.
– Their blood is clear, but it turns blue when exposed to oxygen.
– Their natural colouring isn’t red at all. The red hue only appears when they’re cooked. Heat breaks down the proteins that normally twist the pigment astaxanthin into yellow or blue tones – leaving only red behind.
